Freezer Burn (Let’s Get Chili) is an aged brine fermented hot sauce made from roasted hatch peppers. This was my longest ferment from the 2021 garden at about four months. This is also my only green sauce in 2021. (Although not the only one made with green peppers. See YAHS for mre details.)
This sauce retains the roasted hatch flavor so it is delicious on anything you’d normally put hatch peppers on.

Preparing the Sauce
I had a lot of roasted hatch peppers so this was one of the sauces I bottled the most.
All of the bottles, backlit to maximum the mediocrity of the photograph. The sauce still has the label I used on the fermentation jar to track how long it had been going.
If you’re curious why I named a hot sauce “Freezer Burn” and illustrated it with a winter scene, it is joke for my teammates who are working with me on the new Snowflake data warehouse.
